Crumb Cake This
delicious crumb cake recipe comes from our friend, Alice Smith. It's the first
time I'd ever baked a cake in a 17x11x1 pan. It was simple and tasty! It reminded
me of the crumb cake we got from the bakery when I was a child.
This cake takes no time to make, so you can make it in the morning and take it
warm and fresh to your Christmas brunch! Before
you start baking - make sure that your cinnamon is fresh - it will make all the

Mrs. Smith's Crumb Cake Batter 3
cups flour 2 cups sugar 2 teaspoons baking powder 1/4 lb. margarine
- very soft 1/4 lb. butter - very soft 4 eggs 1 cup milk
Preheat oven to 325 degrees. Grease 17 x 11 x 1 pan Place
all ingredients in bowl and beat with electric mixer until thoroughly mixed. Spread
batter evenly into pan. Topping
1 1/2 cups flour 1 1/2 cups sugar
1 heaping tablespoon ground cinnamon 1/4 lb. melted butter Stir
dry ingredients together in bowl until well blended. Slowly pour melted butter
into dry ingredients as you carefully mix with a fork. Mix gently, you want small
and large crumbs, you don't want to mash them. Sprinkle crumbs evenly
over top and bake for 30 minutes. When cake has cooled dust with confectioner's
sugar.
